Pasta Madness

I'm a pasta lover and I just can't get enough of it :)
Here are some of my recipes.


Creamy Carbonara


250 g spaghetti noodles 
1 small can sliced button mushrooms
1 cup bacon, sliced (small sizes)
1 can Campbell's cream of mushroom soup
2 Nestle All purpose cream
salt
pepper
onions
garlic
cheese (preferable quick melt cheese)


1.  Cook bacon until slightly crisp.  Remove excess oil and set aside.  Saute onions and garlic then mix the bacon.
2.  Add mushrooms and cook for 2-3 minutes.
3.  Add cream of mushroom and cream.  Let it simmer and stir constantly to prevent the bottom to get burnt.
4.  Season with salt and pepper to taste.
5.  Add a bit of grated cheese
6.  Cook spaghetti noodles as instructed in the package.
7.  Serve hot and top with grated cheese

Another creamy carbonara day....





Spicy Tuna and Sardines Pasta



250 g spaghetti noodles 
1/4 c olive oil
1 tbsp olive oil 
1 small can Spanish sardines
1 medium can hot and spicy tuna in vegetable oil
1 medium red bell pepper
salt
pepper
garlic
cheese

1.  Cook spaghetti noodles as instructed in the package.
2.  Saute garlic, bell pepper, tuna, and sardines in 1 tbsp olive oil
3.   Add 1/4 cup olive oil
4.  Toss the cooked spaghetti noodles 
5.  Serve hot and top with grated cheese

Chopsuey



1/2 kg chicken breast, chopped
1/4 kg chicken liver, sliced
1 large carrot, sliced
chicharo
baby corn
pechay Baguio
1 medium bell pepper, sliced
1 medium onion, chopped
1 clove garlic, chopped
2 tbsp flour
salt 
pepper
1 tsp soy sauce
butter


1. Saute onion and garlic.  Add chicken breast, let it simmer for 10-15 minutes.  Add water.
2. Add chicken liver and cook for 5 minutes.  Season with salt and pepper.
3. On a separate pan, cook the carrots, baby corn, bell pepper and chicharo with butter.
4. Add the vegetables with the chicken and cook for 10 minutes
5. Dissolve flour in cold water and add soy sauce.
6. Add the flour mixture, you may add more to thicken the Chopsuey sauce.
7. Add pechay and cook for 3 minutes.
